The Beer: Laughing Dog Brewing's Huckleberry Cream Ale

Our first recipe is designed especially to pair with Laughing Dog Brewing’s Huckleberry Cream Ale (heretofore referred to as HCA for short.) Laughing Dog Brewery is based way up north in Ponderay, Idaho.

Brewery Notes

"We begin with a slight variation of our Cream Ale. Real huckleberries are added during the last minutes of the boil to lend a subtle berry aroma and flavor.”

ABV: 5.5% |  IBU: 8.9

    When we first tasted this cream ale, we were struck by its aromas of lavender, fresh cut hay, and of course, huckleberries. It's delicate crisp flavor makes it a perfect springtime beer. 

    The Blend: River of No Return

    Because HCA is fruity with citrus undertones, so we knew it would pair perfectly with our Idaho-inspired River of No Return Fish & Seafood Rub. River’s sumac and brown sugar comes right alongside the beer’s malt-forward profile and citrus undertones.

    The Food: Pork Chops with a Cherry on Top

    Pork is a mild-tasting meat, and it won't overpower the delicate profile of this beer. We also wanted to bring out the lush huckleberry notes, and cherry preserves is an easy, delicious topping. Its dark sweet goodness perfectly compliments the berry notes in the beer, pulling it all together to celebrate the fruity, savory synergy of this pairing. 

    The best part about this recipe: It’s takes less than 20 minutes from start to finish, which means you can get to enjoying it even sooner!


    The Recipe: Grilled River of No Return Pork Chops with Cherry Preserves

    Prep time: 5 minutes |  Cook time: 10 minutes |  Total time: 20 minutes |   Yield: 2 pork chops

    Ingredients

    Cooking Directions

    1. Season both sides of pork chops liberally with River of No Return Seasoning Blend.
    2. Set grill to high heat and allow to preheat for 5 minutes. Clean and oil the grill grate. Turn left burner off.
    3. Place pork chops over hot grill and cook until well browned, about 3-5 minutes per side.
    4. Move pork to cool side of the grill. Cover and cook until meat registers 135°F on an instant read thermometer when inserted into the thickest part of the pork chop.
    5. Remove pork from grill and let rest for 5 minutes. Serve with a generous dollop of cherry preserves.
